Holiday Recipes: Homemade Ding-Dongs at Scratch Bakery Cafe

As part of our 24 Days of Holiday Cheer campaign, this holiday season, Fashion Island is celebrating our restaurants by giving you the opportunity to bring a special part of Scratch Bakery Cafe home with you. Introducing Scratch Bakery Cafe's Homemade Ding-Dongs, a classic treat made personally for you.

Prepare the Chocolate Cake

  • 9 oz. All purpose flour
  • 15 oz. Sugar
  • 3 oz. Cocoa powder
  • 2.5 tsp Baking soda
  • 0.5 tsp Baking powder
  • 2 Large whole eggs
  • 1 cup Brewed coffee
  • 1 cup Buttermilk
  • 1/2 cup Canola Oil
  • 1 tsp Vanilla extract
  • 1/3 tsp Salt

Step 1: Whisk sugar and eggs together

Step 2: Combine all dry ingredients together

Step 3: Whisk wet ingredients together

Step 4: Add dry ingredients to egg mix, alternating with the wet ingredients

Step 5: Pour into an 8x10 cake pan and bake at 355F for about 20-30 min

Prepare the Buttercream

  • 1 lb. Room temperature unsalted Butter
  • 6 oz. Fresh egg whites
  • 7 oz. Granulated sugar
  • Pinch of salt
  • 1 tsp Vanilla puree

Step 1: Pour 1/2 cup of water in a small pot and add the sugar. Cook the sugar till candy thermometer registers 240F.

Step 2: While the sugar is cooking, whisk the egg whites until frothy. When the sugar is ready, with the mixer still on, pour the sugar into the egg whites then whisk on high until the bowl is cool to touch.

Step 3: Add the vanilla puree, salt, and the butter.

Step 4: Whisk until the cream is fluffy and white.

Assemble the Ding-Dongs

To build the ding dongs, freeze the chocolate cake, using round cookie cutter, stamp out the chocolate cakes into round shapes. Punch out a hole in the middle of each cake, pipe in the buttercream. Freeze the cakes for about 30 minutes, then place on wire rack and pour dark chocolate coating chocolate over each of them.
